The french amaranth ( Amaranthus hybridus subsp. Bouchonii , synonym : Amaranthus bouchonii ) is an annual plant from the amaranthaceae ( Amaranthaceae ). The plant occurs naturally in North America and has spread from there as a neophyte throughout the world. The number of chromosomes is 2n = 32. The plant is 30 - 80 cm high. The green, sometimes reddish-purple, upright, highly branched stalk is bald or slightly hairy. The green elliptical-ovoid to diamond-shaped , 4 - 15 cm long and 2 - 6 cm wide leaves have a short point at the top. The stem leaves are 2.5 - 4 mm long. The monoecious plant blooms from July until the fall with green- or reddish, homogeneous flowers. The flower has 4 - 5, lanceolate, 1.5 - 3 mm long flower tops with a 2 - 3.5 mm long, pointed leaf . The flowers are at the top of the stem in an unflustered plume . The male flowers are at the top of the plume and usually have five stamens . The style of the female flower has three stamps . The 1.3 - 1.8 mm egg-shaped, flattened fruit is a non-popping, single-seeded nut that is shorter than the flower tops. The wrinkled lid is sturdy and ribbed. The black to dark red-brown, smooth, 1 - 1.3 mm seeds are ovoid and shiny. At the bark dairies , the 1.5 - 2.5 mm long fruit bursts. The French amaranth is found on dry, nutrient-rich soil mainly in industrial areas, but also on arable land and river banks.
